The production of SAMBUCANO ham (Tuscan) asserts itselt only in this century after more than a millenium of breeding of swines in natural state, only one feature in Italy, where in the most parts of the regions the swine were bred and handled rationally since the Middle Ages. The seasonal killing of swines in natural state assumed in past times like a ritual character, but in the 1900's the techniques of breeding and slaughtering got refined until to start the tecnique which today is considered the best and most peculiar production of ham in all Europe.
