The salami of ham from SAVIGNI is prepared with pure meat of swine accurately selected by the production of Montain Culaccia, natural guts and a little bit of white milled pepper, which exalts the delicacy and the refinement of this sausage. The trituration of the meat is in fine grain, the fastening is completely made by hand and the seasoning, that lasts from 60 till 70 days, allows to have a sousage without acidity.
