SEASONED PORK SAUSAGE SAMBUCANO BIO

It is produced with the part of the pig used to make the roast chine of pork. The loin is first boned, then lightly marinated, and finally tied and seasoned. The seasoning lasts from two till four months.
We suggest to eat it as carpaccio, with some oil and flakes of Parmigiano.
